Thanksgiving Menu

I think I should just give up on trying to post daily, because I think the world is just conspiring against me. And I keep forgetting. But mostly that conspiracy thing.

I'm contemplating what I'm going to be making for my yearly Thanksgiving Feast, which will be happening on Friday this year. Thankfully (pun/obviousness not intended), my schedule this year is really conducive to planning and cooking ahead. I've already got a turkey in the freezer, and I'll have time to do some cooking on Wednesday, 11/26. I'll be able to bring a dish or two to my aunt's party! Plus, I intend to get a lot of prep work out of the way - chopping, cooking up the turkey brine, etc. I think this might be my less stressful Thanksgiving yet!

My problem with cooking for Thanksgiving is that there doesn't seem to be enough veggies. The food I cook always seem to be either brown or orange in color, and you should probably have some green in there, right? And Sam and Nimalee don't really like vegetables, so the times I've made veggie dishes before, they've gone primarily uneaten. Maybe the mushrooms will be enough? I'd really like to have a healthy aspect to the holiday. Anyway, here's the menu I've thought up:

For Thursday
~ Apple Pie
~ Eggrolls (maybe, if I'm feeling ambitious)

For Friday
~ Brined Turkey
~ Stuffing
~ Sweet Potato Casserole
~ Stuffed Mushrooms
~ Mashed Potatoes (maybe - or some other potato dish?)
~ Pumpkin Pie
~ Apple Crisp (maybe)
~ Sparkling Apple Cider (purchased)

I'm pretty excited about cooking for Thanksgiving! And I LOVE Thanksgiving leftovers. Yum! I might be having more than just Nimalee over, so I hope there's enough for the usual week of yummy leftover food.
